Spanakopita and my absence ...


Here I am back ... unfortunately the situation of my father has kept me far away from the blogosphere in recent days. Babbo
now is in the hospital during the last 5 days, your liver stopped producing proteins that has caused unbearable pain and extreme swelling in the body preventing him from walking or moving. What to say, see it in suffering, a product of morphine could hardly speak, with that look that only transmitting pain and asked for help, see my Babbo tired and almost unrecognizable, broke my heart ... decisions nature are often painful how someone wisely told me, and at this point, scientifically aware that the prognosis is not encouraging, give me hope to God and His will be done.
Nothing like more they return to enjoy a Sunday lunch with him, how we have done in these four years, ever hear him say it, because he always has something to say, no matter the subject ... to see re-build your beautiful and unique Christmas crib with the child's vitality and look that has always characterized, to listen tirelessly insisting that I try and eat what he told me, to see repeated in secret a piece of cake or sweet the occasion to see what was and was trying to speak English, according to a book he had bought especially to communicate with my family .... Babbo, "Ti voglio bene both" (I love you) were my words before radiation treatment, I pounced on him trying to stop time for fear of what might come and he hugged me tightly saying that know ...
You always hear "enjoy every moment as if it were your last" but we're very busy with our lives and we still give us life almost forever those moments and people we love, now I just think that would give anything to enjoy a simple lunch with Babbo ... and in this hope I will stay until you can ... Well dearly
@ s friend, a thousand apologies for not visiting as often your beautiful blogs, but right now I try to give more time to my Babbo.

Here is a simple and delicious recipe of Greek origin called "Spanakopita" and I saw in an Italian TV program, I hope you enjoy it.

Ingredients: Pastry Dough
- 2 rolls / sheets
Feta cheese - 350 gr diced
Eggs - 3, beaten
Spinach - 1 kg
Water - 3 cups Onions
- 3, finely chopped Salt

Oil


pepper Preparation:
In a skillet, heat the brand oil and add onion, cook until browned. Meanwhile in a pot large enough to put water spinach, cover and let simmer until tender.
In a bowl mix the spinach (pre-cast, with no trace of water) with the feta, onion, beaten eggs and season.
In a cake pan (round or square) to extend a pastry dough and add the spinach filling. Cover with another pastry dough and seal up the edges.
Bake in preheated oven at 180 º C for 40 minutes. Cut
a cuadraditos y servir.

Water - 3 cups

Directions:
In a skillet, heat the oil and add onion, cook until brown. Meanwhile in a pot large enough put spinach and add the water, cover and let simmer until tender.
In a bowl mix the spinach with feta, onion, beaten eggs and season.
In a cake pan (round or square) extend the puff pastry and add the spinach filling. Another Cover with pastry sheet and seal the edges. Bake in preheat oven
at 180 º C for 40 minutes. Cut Into
squares and serve.
